These are really handy for drive days or mornings when you know you won’t have time to make breakfast. You can throw in whatever vegetables sound good or even TVP bacon bits and vegan cheese. They reheat well in either the microwave or the air fryer (a little extra crisp if you like that).

They’re also a great way to use up random little bits of vegetables in the fridge before they go bad. 😄

Rise & Ride Omelet Cups

Equipment

  • Blender

Ingredients
  

  • 1 pkg super firm tofu
  • 1 cup water
  • 2 Tbsp nutritional yeast
  • 1 Tbsp cornstarch
  • 1.5 Tbsp neutral oil
  • 1 tsp turmeric
  • 1 tsp salt (optional) I prefer to put black salt (kala namak) on at the table because cooking diminishes it's flavor, but if you prefer having the cups on the go, you might want to add salt at this point.
  • Any omelet mix-ins you want to add such as peppers, onions, broccoli, kale, shredded vegan cheese, TVP sausage crumble

Instructions
 

  • Add all ingredients except the mix-ins to a blender and blend until smooth.
  • Transfer to a bowl and add any desired mix-ins.
  • Pour into muffin cups and bake in an air fryer at 300° for 30 minutes.
