Soy curl chicken-flavored pieces on a salad
These golden soy curl chicken bites are one of my favorite mock meats to keep around. They’re an easy swap in just about any chicken recipe, easy to season however you want, and they end up in basically everything here — salads, wraps, pasta, bowls… or honestly just eaten straight out of the skillet. 😄
If you’re new to soy curls, this is a really good starter recipe. The flavor is familiar, the texture is hearty without being weird, and the whole thing comes together with simple pantry ingredients.
Golden Chicken Bites
Savory soy curl chicken pieces — these are great in salads, sandwiches, wraps, or straight out of the skillet.

Ingredients
- 8 oz soy curls plus hot water to rehydrate
- 2 cups vegan chicken broth I use 2 cups of water and 2 tsp Better Than Bouillon Vegetarian No Chicken
- 1 Tbsp vegan butter or ½ Tbsp nutritional yeast and ½ Tbsp tahini
- 1 tsp onion powder
- 1 tsp garlic powder
- ½ tsp poultry seasoning
- ½ tsp white pepper
- ½ tsp sugar

Instructions
- In a large bowl or pan, rehydrate the soy curls in hot water for 10 minutes.
- While the curls are rehydrating, combine the other ingredients and mix well.
- Drain the rehydrated soy curls and press/squeeze out as much water as possible. (Be careful; they might be hot from the water.)
- Add the drained soy curls to a skillet over medium-high heat and cook for two minutes to continue drying them.
- Pour in the chicken mixture and cook until it's fully absorbed.
