This cozy potato soup is one of our favorite busy-night dinners because we almost always have the ingredients around, but the flavor is still a lot of bang for the buck.
This is our “we have nothing in the house — what’s for dinner?” dinner. 😊

Ingredients
- 4 large or 8 small potatoes, chopped in large pieces
- 3 cups broth
- 1 tsp smoked paprika
- 1 tsp seasoning salt
- 1 tsp minced garlic
- 1 cup unsweetened non-dairy milk

Instructions
- Add the chopped potatoes, 3 cups broth, 1 tsp smoked paprika, 1 tsp seasoning salt, and 1 tsp minced garlic to the Instant Pot.
- Close the lid, set on high pressure for 10 minutes, and press start.
- When the cooking cycle is complete, vent immediately, then add 1 cup of milk.
- Top with any desired favorites, such as shredded vegan cheddar, bacon bits, or chives, and enjoy!
