Ingredients
  

  • 4 large or 8 small potatoes, chopped in large pieces
  • 3 cups broth
  • 1 tsp smoked paprika
  • 1 tsp seasoning salt
  • 1 tsp minced garlic
  • 1 cup unsweetened non-dairy milk

Instructions
 

  • Add the chopped potatoes, 3 cups broth, 1 tsp smoked paprika, 1 tsp seasoning salt, and 1 tsp minced garlic to the Instant Pot.
  • Close the lid, set on high pressure for 10 minutes, and press start.
  • When the cooking cycle is complete, vent immediately, then add 1 cup of milk.
  • Top with any desired favorites, such as shredded vegan cheddar, bacon bits, or chives, and enjoy!
