Slices of vegan ham
I originally started working on this recipe because I wanted to make a traditional Christmas dinner for my parents that included an actual centerpiece.
This vegan ham ended up becoming a year-round favorite. 😊
Ingredients
- Super firm tofu: This is my favorite tofu because it doesn’t require any pressing and has a great texture all on its own.
- Vital wheat gluten: This high-protein flour is what provides the firmness to the vegan ham. Mixed with the tofu, you get the best balance of chewy and juicy.
- Cherry Dr. Pepper Zero: This gives the ham an extra zip. If you don’t want to use it, you could probably substitute some of the liquid with vegetable broth, but you would probably want to add some extra maple syrup or another sweetener. (Just make sure to equal the original amount of liquid.)
- Liquid smoke: This gives the ham it’s signature smoky flavor.
- Maple Syrup: The sweet to our savory.
- Flavorings: I love the Better Than Bouillon products — so easy for so much flavor! — and I’ve used two of them here, regular vegetable and Smoky Chipotle. The vegetable can be substituted with any vegetable bouillon or powder. The chipotle provides umami flavor, so a small bit of chipotle powder or a canned chipotle would be a good substitute.
- Spices: Some onion powder and smoked paprika add another bump to the flavor.

- 1 Instant Pot
- 1 Instant Pot trivet or other steamer rack / stand that works for Instant Pot
Ingredients
- 1 package super firm tofu
- 1 can Cherry Dr Pepper regular or zero
- 1 1/2 tsp onion powder
- 1 1/2 tsp smoked paprika
- 1 tsp Hickory liquid smoke
- 1 tsp Better Than Bouillon Vegetable or an amount of vegetable broth powder to equal 1 cup of broth
- 1 Tbsp maple syrup
- 1 - 1 1/2 Tbsp Better Than Bouillon Chipotle
- 2 cups vital wheat gluten

Instructions
- Process everything in except gluten flour in a food processor.
- Add to a large bowl, mix in 2 cups (240 g) of gluten flour, and knead for one minute.
- Form the dough into a log and wrap tightly in cheesecloth or foil. If you don't want foil to touch the dough, wrap it first in parchment paper.
- Add one cup of water to the Instant Pot and set the ham log on a trivet.
- Set on high pressure for 90 minutes.
- Release pressure when finished. Be careful taking out the ham; it's hot! Unwrap and enjoy.
