Cover the soy curls in hot water for about 10 minutes to rehydrate.
Mix the remaining ingredients in a separate bowl.
Drain the rehydrated soy curls and squeeze out as much water as you can.
Add the soy curls to a dry pan over medium heat and cook for a few minutes, stirring occasionally. The goal is to dry out the curls as much as possible. This helps the soy curls absorb more flavor and develop a better texture. Once they’ve started to firm up, add the liquid and continue cooking until the liquid disappears.
